Elizabeth 'Betsi' Evelyn (Cook) Jackson, 46, passed away in Topeka, Kansas, on Wednesday, November 16th, 2022. Betsi was born on December 18th, 1975, a month after her original due date of November 18th, 1975. She was born to Bruce Cook and Bobbi (Gordon) Cook. She was the elder sister of Becki (Cook) Halloran and Bonni (Cook) Goodwin. Betsi graduated from Shawnee Heights High School in 1994, and matriculated to MidAmerica Nazarene University, where she majored in English, and graduated from in 1997. In 2001, her phone number was given to Daniel Jackson, and after two weeks of talking on the phone every night, and a further nine months of dating, the pair were married on April 27, 2002. Betsi and Daniel had two children, Evelyn and Graham. Betsi renewed her academic drive by enrolling at Washburn University and graduating in 2016 with a Master's in Social Work. After this, she graduated from the University of Kansas with her Doctorate in Special Education in 2022.

There were few avenues, either creative or academic, that Betsi did not excel in. She was a student without compare, a singer who could bring the most jaded to tears, and a conversationalist who made any topic an interesting one. She was possessed of a uniquely creative mind, and spent many hours working on beautiful, completely hand-stitched quilts and highly detailed miniature scenes. She was a loving daughter, even when she scared her parents by piercing her nails in high school. She was a reliable sister, one who could always be trusted to have a listening ear and a kind word. (Once she grew out of attempting to get her sisters in trouble.) She was a witty friend, and even the most boring of situations could be made enjoyable with her quick humor. She was an affectionate, compassionate mother, who would stop at absolutely nothing to make sure her children knew they were loved. She was a devoted wife, and there are no words to describe how deeply and how passionately she was loved and gave love in return. She was a devout Christian all throughout her life, and found great comfort and joy in her faith.

Betsi was preceded in death by her grandparents Leroy Cook, Evelyn (Spark) Cook, Ersel Gordon, and Evelyn (Miller) Gordon. She is survived by her husband, Daniel, their children, Evelyn and Graham, her parents, Bruce and Bobbi, her sisters, Becki and Bonni, and their families.

A Funeral Ceremony will be at 10:00 a.m., Wednesday, November 23, 2022, at the First Church of the Nazarene, 1001 SW Buchanan St., Topeka. Visitation will begin at 9:00 a.m. on the same day. Private burial will take place at Mount Hope Cemetery in Topeka.
